Mango chicken salad


Salad ingredients:


Chicken breast - 1 per person

Favourite salad mix - baby gem lettuce, spinach

Mango 1 small container or 250g

Seeds of your choice - Roasted sunflower seeds, pine nuts walnuts

New Potatoes boiled

Avocado


Pomegranate vinaigrette


Pomegranate juice - 100ml

Oil - 50ml

Balsamic vinegar - 25ml

Salt and Pepper to taste

Honey 1 tsp


For the dressing


Place all ingredients in a jar or a container with a lid and shake until combined. Can be kept in the fridge for up to 7 days, shake before each use to make sure all ingredients are well combined.


For the salad

  • Cook the chicken until golden brown in a frying pan using an oil of your choice

  • Whilst the chicken is cooking put the new potatoes on to boil in a saucepan, cook until soft

  • Put chicken and potato aside to allow to cool

  • Grab your favourite greens and place into bowl with the rest of the ingredients, top with dressing and toss.
