Salad ingredients:
Chicken breast - 1 per person
Favourite salad mix - baby gem lettuce, spinach
Mango 1 small container or 250g
Seeds of your choice - Roasted sunflower seeds, pine nuts walnuts
New Potatoes boiled
Avocado
Pomegranate vinaigrette
Pomegranate juice - 100ml
Oil - 50ml
Balsamic vinegar - 25ml
Salt and Pepper to taste
Honey 1 tsp
For the dressing
Place all ingredients in a jar or a container with a lid and shake until combined. Can be kept in the fridge for up to 7 days, shake before each use to make sure all ingredients are well combined.
For the salad
Cook the chicken until golden brown in a frying pan using an oil of your choice
Whilst the chicken is cooking put the new potatoes on to boil in a saucepan, cook until soft
Put chicken and potato aside to allow to cool
Grab your favourite greens and place into bowl with the rest of the ingredients, top with dressing and toss.
