Watermelon and feta salad with infused lemon chickpeas


Watermelon and feta salad


Serves 1


  • ⅓ tin of chickpeas

  • 1 slice of lemon

  • 80g of couscous

  • ½ watermelon cut up into slices or 1 handful strawberries

  • ⅓ cucumber length

  • 2 tbsp lemon juice or 2 tbsp honey

  • 40g feta cheese

  • Optional mint leaves/ herbs and spices


  1. In one bowl add the couscous with boiling water to cover enough and let sit for 5 minutes.

  2. In another bowl add the watermelon, feta and cucumber, mint leaves/ spices and mix with lemon juice or honey.

  3. To the couscous, add the chickpeas and lemon slices and squeeze to taste.

  4. Combine the bowls together and mix them together.

  5. Serve

Easy ways to add water into your diet is through fruits/vegetables with higher water content e.g. cucumber, celery, courgette, watermelon, apples.
