Serves 1
⅓ tin of chickpeas
1 slice of lemon
80g of couscous
½ watermelon cut up into slices or 1 handful strawberries
⅓ cucumber length
2 tbsp lemon juice or 2 tbsp honey
40g feta cheese
Optional mint leaves/ herbs and spices
In one bowl add the couscous with boiling water to cover enough and let sit for 5 minutes.
In another bowl add the watermelon, feta and cucumber, mint leaves/ spices and mix with lemon juice or honey.
To the couscous, add the chickpeas and lemon slices and squeeze to taste.
Combine the bowls together and mix them together.
